Título: Molecular mechanisms underlying the protective action of agro-nutrients/bioactives and their derivatives on health and disease. Abstract: The medicinal and pharmacological activities of plants have drawn food researchers to use it in designing new functional food products and assess their effect on product quality and consumer acceptability. The whole olive (Olea europaea L.) stone represents a by-product of both the table olive and the olive oil industries. The olive seed is a storage organ accumulating great concentration of nutrients, specially proteins like legumins and vicilins, as well as transcripts of interest among other numerous compounds including lipids, fiber, and nutraceuticals like polyphenols. On the basis of their possible bioactive properties, the potential use of agro-derived compounds as functional food ingredients for health maintenance and the prevention of chronic diseases, combining metabolism and nutritional mechanistic studies in humans, animals and relevant cellular models, will allow the role of agro-food as an agent for improving health and, initiating the development of new classes of food, known as functional foods
